Caramelized Nectarines


This recipe is such an easy and amazing dessert. The combination of the hot nectarines and the frozen yogurt is a sure thing. I really can’t decide which I like best – peaches or nectarines.
If you have any leftovers, you can use them in just about anything including fresh fruit salad.

Serves 4

4 nectarines, pitted and cut into quarters

½ cup brown sugar

2 cups frozen yogurt

Organic honey

Preheat oven to 500 degrees. Line a baking sheet with foil and spray with nonstick cooking spray.

Place nectarines on the baking sheet, flesh side up, and sprinkle with brown sugar. Roast for 20-25 minutes or until the sugar caramelizes. Spoon on the yogurt and top with a little squirt of organic honey. You can also use Greek style yogurt in place of the frozen yogurt.
