Breakfast Cereal Tart


This was an interesting tart made of your favorite breakfast cereal and filled with yogurt. I expect that you can use just about any cereal with the same results.

This would be a fun recipe to make for a healthy brunch and can easily be changed up depending on the fruit that you add.

Honestly, this tart was a meal in itself.

It was a delightful change from yet another daily helping of yogurt and granola.

Bon Appetit!

2 cups Special K, crushed finely
3.5 ounces butter, melted
½ tablespoon caster sugar

Filling:

Greek yoghurt (I was out so I used regular)
Seasonal fruit

Mix the finely crushed Special K with the melted butter. Start with 2 ¼ ounces and mix in. You want the end result to be like damp sand so add enough butter until you have the desired texture. Add the sugar and mix well.

Press the crumbs into tart cases and place in the fridge to set for an hour.

When the crust is set, remove from the tart cases and place on a serving platter.

Add some Greek yogurt (sweetened with Honey if you wish) and top with fresh fruit.
