So what exactly is the first-bite rule? Every bite should taste as good as the first bite and the revered art of French patisserie is alive and well in San Miguel de Allende, Mexico. Proof in point: Panio’s Galette des Rois - a King Cake, the traditional French pastry associated with the celebration of the Epiphany.
At first we thought it was an apple cake and then we took a bite. The cake is made of layers of puff pastry filled with almond cream: frangipane made of almonds. Panio has crafted the perfect puff pastry, a certifiable buttery wonder of physics, that is so good that even Melissa Perry Barnett, who worked for Alice Waters at Chez Panisse and is one of SMA’s most knowledgeable pastry makers, said that it’s the best Puff Pastry she’s ever had as she took her second bite. We could not stop raving about the texture and flavor of this Galette.
You can purchase it on either Thursday or Saturday until 1/6/24. The first week of January however, it will be available every day, made from the time honored, Panio family recipe that totally surprised us this Christmas.
Is this one of the best desserts we’ve ever had? Yes, she said, counting the hours until Thursday morning.
