We found two amazing tacos - both pork - in SMA during Millesime GNP Weekend that are perfect examples of what we look for in a taco: originality and flavor so we decided to start our list here: #1: Pork Jowl Tacos Pork jowl is a cut of pork from a pig's cheek. It’s definitely one of the most flavorful tacos we’ve ever eaten from Chef Eduardo Palazuelos of Zibu Allende.
