Pirules Garden Kitchen at The Rosewood

Another restaurant that made our list for 2025 is Pirules Garden Kitchen, a gorgeous new spot in the gardens at The Rosewood San Miguel that is powered by some of the best chefs in SMA: a new chef that’s passionate about contemporary Mexican food, Odín Rocha, and Rosewood’s Executive Chef, César Enciso, who is dedicated to developing a growing group of small, local suppliers in order to achieve the rich flavors and traditions of authentic, Mexican cuisine. La Factoría is a perfect example; a local cheese that’s used for the Queso Fundido also made with a homemade chorizo. I sat down with Chef Cesar Enciso to get the details on their cooking philosophy and how they create dishes and flavors with a study of what’s on their new menu. What impressed me most was the litany of flavors that kept surfacing; it took three hours to get the story on what the chefs have in store for you and it’s all coming this month along with a look at their extensive training. We can tell you that every dish is uniquely Rosewood down to the ingredients, presentation and flavors. We loved the vegetarian Barbacoa with pickled Chiles, the delicious Salmon salad with trout caviar and most of all, the Short Rib Fideua with cured egg yolk and salsa macha. All of these dishes have amazing flavors and textures. The new dining room is splendid but the outdoor spaces are brilliant. I prefer to eat outside, even on a cold day in January. I wish it were open for breakfast because I would take my coffee there every morning. This would be the first restaurant on my list to impress visitors. I think it’s one of the best restaurants the Rosewood has done since they opened in March, 2011. There’s also a new menu at Luna Rooftop.
