Rustic Gazpacho

Now that the Farmers markets are in full swing, great tomatoes are so easy to get. What better summer soup than Gazpacho - my absolute favorite cold soup. I like mine chunky not smooth. This is not only one of the healthiest recipes you can also make it in less than 15 minutes.

Ingredients:

1. 6 ripe tomatoes, cut into chunks

2. 1/2 large cucumber—peeled, halved, seeded and cut into chunks

3. 1 bell pepper, cut into chunks

4. 2 garlic cloves, smashed

5. 1 cup water

6. 1/3 cup extra-virgin olive oil

7. 2 tablespoons sherry vinegar

8. ¼ cup cilantro

9. 1 tsp. Worcester sauce

10. Salt

11. Tabasco, for serving

In a blender or food processor, combine all until coarsely pureed. Season with salt and refrigerate until chilled. Serve with Tabasco.
