Here are some fall cocktails that will make you wondering why the season didn’t come sooner.
Whether it is rum or tequila, white spirit rule in both the heat of summer or the chill of fall.

Cinnamon Toast CocktailIsn’t that the name of a General Mills cereal?

12 ounces Apple Cider, warmed
3 ounces Captain Morgan's Spiced Rum
1 tablespoon cinnamon
1 tablespoon sugar
1 cinnamon stick, to garnish

Combine the cinnamon and sugar on a plate that the rim of your glass will fit on. Wet the rim of your glass with the cider or rum. Spin the rim of your glass in the cinnamon sugar.

Combine the cider and rum in your glass, garnish with cinnamon stick. Enjoy!

Fallen Angel
Makes 4
Recipe by Jeffrey Morgenthaler, Clyde Common, Portland

1/2 cup sugar
1/2 cup water
1 tablespoon matchstick-size strips peeled fresh ginger
3/4 cup añejo tequila
6 tablespoons fresh lime juice
2 tablespoons crème de cassis
1 teaspoon cinnamon bitters or Fee Brothers Old-Fashioned Bitters
2 cups boiling water
4 orange twists

Mix first 3 ingredients in heavy small saucepan. Bring to boil, stirring until sugar dissolves. Boil until mixture measures 1/2 cup, about 3 minutes. Strain ginger syrup into heat-proof 2-cup measure; cool.
Add tequila, lime juice, crème de cassis, and bitters to syrup; stir to blend. Divide mixture among 4 glasses. Pour 1/2 cup boiling water into each glass, garnish with orange twist, and serve.
