Doreen’s White Bean Salad

I love it when I find a dish that does not require cooking and this bean salad is the perfect choice to serve as a side with grilled tuna or fish.
It can be served warm, cold or at room temperature. I prefer to serve it cold.

This is a great base recipe that you can add ingredients to. You can throw in black beans for a mixture of color or add some corn or lima beans if you need to use them up.

Canned butter beans or white kidney beams

Finely chopped fresh garlic – 6 to 8 cloves

Finely chopped fresh Italian flat parsley (use a handful of leaves – no stems)

Olive Oil (not too much – this is aa salad not a soup)

Red Wine Vinegar – pour over beans to your taste

Salt and Fresh Pepper to taste

Mix all ingredients together in a serving bowl and let marinate before serving.
