Olive Spread

My dad use to serve olive spread on toast points when he had guests came over for drinks back in the late 50’s – early 60’s. I can still see them sitting around our living room just like in the series Mad Men – series three which is now out in DVD.

Here is an updated version using both black and green olives, red bell pepper along with extra virgin olive oil and spices. Make this in a food processor and chill overnight. Serve on thin slices of French bread.

• 1 cup pitted black olives

• 1 cup pitted green olives

• 2 cloves garlic, peeled

• ½ Cup red bell pepper

• 3 tablespoons olive oil

• ½ tsp each fresh oregano and basil

• Salt and pepper to taste
