Summer Salsas

Here are some salsa recipes that you can use to flatter your best summer grilling recipes.

Fresh Chilli Sauce

• 4 long red chillies, chopped

• 3 cloves garlic, peeled

• 1 cup coriander (cilantro) leaves

• ½ cup grated palm sugar

• ⅓ cup fish sauce

• 1 cup lime juice, (about 4 limes)

• 1 small piece ginger, peeled and sliced

Place the chillies, garlic, coriander, sugar, fish sauce, lime juice and ginger in the bowl of a food processor. Process for 1–2 minutes or until well combined. Makes 2 cups.


I tried to duplicate the recipe of the Cucumber Salsa I bought at my gourmet food store. This salsa is outstanding and adds a real kick to your fish or egg dishes especially if you are generous with the Tabasco.

Cucumber Salsa

3 Medium Cucumbers – Peel. Remove seeds.

3 Medium Tomatoes – remove seeds.

1 green Bell Pepper

¼ cup Tomato Juice

2 Tbsp Cilantro

2 Jalapeno Peppers – remove seeds

½ tsp. Apple Cider Vinegar

Tabasco Sauce to taste

¼ cup Scallions

Salt and Pepper to taste

Squeeze of Lime Juice

Place all ingredients in a food processor. Process for 1-2 minutes or until well combined.


This salsa is also great on eggs and really gives your breakfast a kick.
