If There Is One Thing I Am Good At...It's Being Irish.



I have made Corned Beef on St Patrick’s Day for years. This simple, easy recipe was given to me by the manager of our gourmet food store. The coke tenderizes the corned beef and the sugars in it caramelize the meat which tastes really wonderful. Throw in potatoes and cabbage and you are ready to serve up a great meal for a rowdy St Patrick’s Day crowd like we had at my neighbors last night.

I did have a glass of peppermint schnapps… just for the sake of tradition but I really celebrate the day ON THE DAY so can you check me out come Thursday morning? I may need a big cup of coffee and some Baileys.

Place the brisket, fat side up in a roasting pan with water, and a can Coca Cola. Tent with foil, and roast for at least three hours at 350 degrees depending on the size of the brisket. Take off foil for the last 1/2 hour of roasting.

A friend sent me this photo of the dog but was not sure who took it. Love those dogs who have their Irish up. He looks pretty relaxed about the whole Irish thing, doesn't he?
