Shrimp and Gazpacho

This was an easy and healthy lunch I put together when my friend stopped by this afternoon. Gazpacho is such a light and fresh summer soup.
I also like to use the extra diced vegetables in other things such as salsa or a topping for fish.

Whatever I have on hand is what goes into the recipe this week…and all fresh from the Farmers Market.

• 2 cucumbers, diced

• 3 large tomatoes, diced

• 1 red pepper, diced

• 1 green pepper, diced

• 1 yellow pepper, diced

• 1 red onion, diced

• 3 garlic cloves, minced

• 1/4 cup red wine vinegar

• 2 1/2 cups tomato juice

• Salt and Pepper

• 1/4 cup fresh cilantro, chopped

• 1/4cup fresh parsley

• Juice of 1 lemon

• 1 Tbsp Extra Virgin Olive Oil

• Tabasco

In large glass bowl combine vegetables. Add remaining ingredients and mix well.
